I’m an Associate Professor of Practice in Food Safety and Food Engineering at Texas Tech University, where I’ve been developing and teaching undergraduate and graduate level classes in the areas of food microbiology, food safety, food engineering, and hygienic design of food processing plants since 2008. I’ve had the opportunity to become familiar with different food matrixes and processes including Beef, pork, poultry, RTE meats and possess extensive knowledge of USDA-FSIS and FDA regulations and requirements for the production of safe food products.
